Thank you for your continuous support so we can continue to provide creative education and plant-based meals to our kids throughout Taiwan!
It's been a fun few months as we wrapped up projects learning about Japanese culture through the creation of strawberry daifuku - this series of workshops hosted in four locations: Taoyuan, ChingChuan, Wanhua, and Taitung. Approximately 50 children participated in the classes and 60 plant-based meals were served. We had some hiccups adjusting the recipe for the mochi which would result in the class running an extra 1.5 hours but the kids still had a great time no matter what.
In hosting this creative education course that took children on a trip to Japan, it also gave them a hands on experience of making strawberry daifuku from scratch. Strawberry daifuku is a seasonal delicacy that is also very popular in Taiwan and sometimes quite expensive to gift, so for the kids to be able to make this and gift it to themselves or their families was a wonderful and delicious experience. Classes were paired with a savory and nutritious Japanese-styled vegetable curry lunches. With the sponorship of Omnipork plant-based meat, vegan eatery Ooh Cha Cha generously created vegan pork cutlets to top the curry rice.
We are continuing to pick up our rapid pace from COVID which shut down meal sharing and gearing up for two amazing camps in July and August. In just a matter of days, we will be taking kids out to Yilan for an overnight surf camp that hits on themes of ocean conservation through beach clean ups, skateboarding, bodyboarding, and surfing. Vegan fried fish and chips will be served for dinner for a group of close to 40 and all the kids will help out with making a plant-based burger themed dinner. In August we have our first three day summer camp in Wulai in which we will take kids on a trip around the world via creation of the local cuisine. Each day plant-based meals will be freshly cooked and served to approximately 40-60 kids ranging from pizzas (Italy), sushi (Japan), and crepes (France) and Bright Side Projects looks forward to this challenge!
